This is an unusual but tasty italian pasta sauce adapted from Elizabeth
David:
INGREDIENTS (for 5 people):
500g pasta
100g walnuts
100g pine nuts (pine kernels)
2 cloves garlic
few sundried tomatoes, chopped
2oz parmesan, grated
salt and pepper
good olive oil
a little cream, milk or water
INSTRUCTIONS:
Grill pine nuts or toast by shaking in a pan with no oil.
Watch carefully so they don't burn.
Blanch garlic cloves, then peel and chop.
Grind in blender or food processor the nuts, garlic and cheese, to make
a paste, but not too smooth.
Add oil gradually.
Taste and add seasonning, tomatoes, more cheese or oil as liked.
Cook pasta and just before serving add a little liquid (milk or water)
to the sauce so it spreads over the pasta.
Drain pasta and return to pan with sauce. Heat therough and serve.
